The Pyrenees Mountains and the Cévennes form a natural amphitheatre around the vineyard of the Pays d’Oc. The Mediterranean Sea, in the south, offers warm and dry summers increasing the maturity of the grapes. The effect of the region is perceptible while tasting the wines, the grapes variety differ according to climate, exposition and soils. The Pays d’Oc is a unique patchwork of vineyards. The grapes are harvest at an optimum maturity then immediately transferred to the cellar. Afterwards, the fermentation process begins, followed by the maceration process which will last for several weeks. Each grape variety is treated separately. The Merlot is vinified and aged in American oak barrels while the Cabernet Sauvignon is vinified in French oak to give complexity to this concentrated assembly.
